Udon

 Ingredients: 

udon packet, ginger, garlic, red or green cabbage, carrot, cashew butter, sesame oil, scallion, soy sauce, brown sugar, sriracha, rice vinegar


Method:

1. Make the sauce : Mix 1 tbsp soy sauce, 3/4tsp brown sugar, 1.25 tsp sriracha, 1 tsp cashew butter, 1 tsp rice vinegar. Whisk it till it becomes homogenous

2. Grate 1tbsp of garlic and 1 tbsp of ginger, cabbage, carrots. Chop scallion

3. Heat 2 tbsp of sesami oil and roast scallion for a  minute. Then add ginger, garlic and stir for a min. Then add rest of the shredded veggies and roast for a minute

4. Cook udon according to package instructions while doing step 3

5. Add cooked udon and sauce to the roasted veggies . Stir well for few minutes

6. Add maggie hot sauce as dressing for extra taste
