Paneer Butter Masala
Ingredients:
Oil, butter, cardamom, onion, tomato, salt, red chilli powder, garam masala, coriander powder, cashews, cinnamon, cloves, bay leaves, paneer, kasuri methi, ginger, garlic
Method:
1. Boil 3 cups of water and add paneer cubes to it. Let it rest for 20 minutes. This will soften the paneer
2. Heat 1 tbsp of oil in a pan. Add 2 cardamoms (seeds) and 1 cup cubed onion. Saute in medium flame till onion turn transparent. It takes about 4 minutes
3. Then add the following to the above mixture: 1.5 cups chopped tomatoes, 3/4 tsp salt, and saute till the mixture is mushy
4. When the mixture is soft and mushy, add the following:
- 1 tsp red chilli powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 12 pieces of cashews
- 1/4 tsp sugar to balance the flavors
5. Saute the above mixture in low heat for 2-3 minutes. Turn off stove
6. Once the mixture is cool, make a paste in a blender. Add 1 cup water while grinding. This paste must be very smooth and silky puree.
7. Heat a pan in low flame; add 1.5 tbsp of butter. Add 2 green cardamom (whole) , 1 bay leaf, 1/2 inch cinnamon, 3 cloves. Roast it till spices sizzle
8. Add grated ginger and garlic (1 tsp each) to the above step and saute till the raw smell goes away
9. Now pour the onion-tomato puree to it and mix well. Add 1 cup of water or more if needed and let it boil to gravy consistency. Cook in medium flame till the gravy turns thick and flavorful
10. Add paneer cubes to the mixture. Add 1 tsp of kasuri methi by crushing it with palms.
11. Stir well. Leave on low flame for 3 minutes and turn off stove.
