Gojju

 Ingredients:

Gojju powder ingredients: 8 red chillies, 1 tsp jeera, 1/2 tsp menthya, handful dry coconut, 1 tbsp urad daal, 1 tbsp channa daal (kadle bele)

Other ingredients: oil, mustard, turmeric, urad dal, channa dal, curry leaves, jaggery, salt, 1 tsp tamarind paste, vegetable - bitterguard or cucumber or pineapple or okra, 1 tsp rice flour (optional)


Method:

1. Dry roast ingredients that are shown under Gojju powder ingredients above. Make powder

2. Cut vegetable of choice into small pieces (2-3 cups) If using cucumber, peel the skin first. If using bitterguard, remove the seeds. 

3. Heat 1 tbsp oil, add mustard. Once it splutters, add turmeric, 1/2 tsp urad dal, 1/2 tsp channa dal

4. Add vegetable and curry leaves; and cook. If using okra, just dry roast to cook; otherwise add water just enough to cook the vegetables.

5. To the cooked vegetables, add salt, tamarind paste, 1 tsp jaggery, and the gojju powder. Add water to bring it to correct consistency and let it boil for a minute. Turn off stove. 

6 (if needed). If consistency is too thin / watery, you can fix it by doing this: Mix 1 tsp of rice flour with 2 tbsp water; stir well and add it to gojju and heat it. The consistency will become thick.
