Truffle Cake

Ingredients: Yellow cake mix (Pillsbury) whipped cream white powdered sugar vanilla extract coffee decoction strawberries banana sliced almonds hershey's chocolate bar Method: 1. Bake the cake according to instructions in two different round pans  (2-layer cake) 2. Make coffee decoction 3. To whipped cream, add vanilla extract and mix 4. Slice strawberries and bananas 5. Grate chocolate 6. Once cake is cooled, take the cake out of baking dish and place them on different plates 7. Spoon coffee decoction on top of one of the cakes to soak it everywhere 8. Put the whipped cream mixture on it 9. Arrange sliced strawberries and banana on it 10. Sprinkle white powdered sugar, chocolate shavings, and almonds on it 11. Carefully lift the other plain cake and place on top of the one with toppings 12. Repeat steps 7-10 to the top cake

Matodi Palya

Ingredients: One bunch Spinach Chana daal (kadale bele) Red chillies Coconut (frozen, grated, unsweetened) Hing Turmeric Mustard Method: 1. Soak 1/4 cup of chana daal in water for 2 hours 2. Chop spinach 3. Cook the spinach with little bit of water. Let it boil for five minutes 4. Grind these ingredients in a mixer with very little water to make a paste: - soaked daal - 1 tbsp coconut - 1/4 tsp hing - 1/2 tsp turmeric - 6 red chillies 3. Heat 2 tbsp on oil in a non-stick pan. Add 1 tsp of mustard. After it sputters, add the paste 4. Stir the mixture for 5 minutes and add salt 5. Add the cooked spinach to the mixture and stir till the water evaporates.

Ras Malai

Ingredients: 2 pounds Ricotta cheese 2 quarts half and half 2 cups sugar           5 cardamom pods 1 bay leaf 1 tsp vanilla rose water Method: 1. Mix 1.5 cups of sugar with the ricotta cheese and bake it in oven at 400 deg F for about 1 hour and 15 minutes in a flat dish covered with aluminum foil. The cheese should have hardened and turned a pale brown 2. Thicken the half and half by simmering in microwave for about 30 minutes. When it thickens the volume drops to around half of the original volume 3. Add the remaining 0.5 cup sugar, cardamom pods (crushed), bay leaf, vanilla, and rose water to the half and half. Heat for few minutes 4. After the cheese is baked, cut into 2 inch squares and add to the hot thickened half and half. Cool for a few hours in the fridge.                

Dosa Paste

Ingredients:  Rice, Urad daal, Toor daal, Channa daal, Methi seeds, Avalakki (Poha) Method: Mix these ingredients in a bowl: 1 1/4 cups rice 3/4 cup urad daal 1/4 cup toor daal 1 tbsp channa daal 2 tsp methi seeds 1 tbsp avalakki Rinse in water and then soak in water for about 4 hour Discard excess water and grind to smooth paste in a mixer Add 1 tsp of salt to the paste and mix well Close the paste container with a lid and keep in warmer to ferment It takes around 12 hours to ferment well but turn off warmer after one hour

Egg Burji

Ingredients:  bell pepper, tomato, onion, green chillies, cilantro, eggs, bread, salt, oil, butter, cheddar cheese,  optional: red chilli powder, garam masala, dhania powder Method: 1. Chop into small pieces : 1/4 of bell pepper, 1/2 onion, 1/2 tomato 2. Slit one green chilli 3. Whisk 3 eggs in a bowl 4. Place non-stick pan on stove and put one tablespoon of oil 5. When oil is hot, add chopped onion, bell pepper, and green chillies to it and stir for 2 minutes 6. Add chopped tomato to it and stir for few minutes till it is mushy 7. Add 1/4 tsp of salt and stir 8. Add whisked eggs to it and after a minute, stir till the egg is firm 9. Add a tablespoon of grated cheddar cheese and stir till cheese melts. If you want it spicy, add just a pinch of red chilli powder, dhania powder and garam masala.  10. Toast bread in toaster and smear butter on it
